- 2-4 lbs. steak, about 1 inch thick, sliced thin
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 2 T. olive oil
- 1 red or green bell pepper, sliced thin
- 1 small onion, sliced thin
- 4-6 mushrooms, sliced thin
- about 1 cup steak marinade of your choice
- 1/2 tsp. oregano
- 4-6 sub rolls, split partially open lengthwise
- 8-12 cheese slices of your choice
Slice steak into strips, put in a bag with your favorite marinade, and let soak for at least an hour (longer is better). When steak is done marinating, remove from marinade. In a large skillet heat the olive oil, oregano, salt, pepper, and garlic powder over medium high heat until rippling. Add steaks to oil and spices and cook until done according to your preference - about 4 to 6 minutes. Transfer only the steak to a plate and cover with foil - leave the oil and spices in the skillet.
Next, add the onion, bell pepper, and mushrooms to the skillet and cook until vegetables are softened and golden brown - about 6 to 8 minutes. Turn off the heat and stir in the cooked steak strips.
Divide steak mixture among the sub rolls, top with cheese, and arrange sandwiches on a baking sheet. Bake at 450 until cheese is melted and sub rolls are toasted around edges. Serve.
