Cinnamon Glazed Scones

 

Scones:

  • 2 Cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup butter
  • 1 egg yolk
  • 3 T. honey
  • 1/3 cup buttermilk*

Topping:

  • 1 egg white
  • 2-4 T. sugar
  • 1 tsp. cinnamon**

Glaze:

  • 1 cup powdered sugar
  • 3-4 tsp. milk (enough to make a glaze)
  • 1/2 tsp. vanilla

Pre heat oven to 400 degrees. Whip together butter, baking powder, baking soda, salt, honey, egg yolk, and buttermilk. Add flour and mix JUST until combined. Do NOT over mix or they won’t be fluffy and melt in your mouth delicious! Form dough into a ball on a lightly floured surface. Roll or pat out into a half-inch thick circle. Cut into about 8 equally-sized pieces. Transfer to a greased baking sheet. In a small bowl, whisk the egg white until frothy and brush over the top of scones. Sprinkle with cinnamon and sugar. Bake at 400 degrees for 10 to 12 minutes. In a separate bowl mix together powdered sugar, vanilla, and milk until glaze is desired consistency. Drizzle over scones after they bake.

 

*1/3 cup milk + 1/2 tsp. lemon juice or vinegar
** pumpkin pie spice works good also since it has cinnamon and other spices
