Garlic Chicken in Lemon-Butter Sauce

  • 4 chicken breasts
  • 1 cup flour + 1tsp. salt + 1/2 tsp. pepper
  • 3 eggs
  • 1/2 cup parmesan or mozzarella
  • 1 T. olive oil
  • 5 T. butter
  • 5 minced garlic cloves
  • 1 T. parsley
  • 2 T. lemon juice

Put flour mixture on a plate. In a shallow bowl, whisk eggs; stir in cheese. Roll chicken in flour, then in egg mixture. Brown the chicken in a skillet with a little bit of olive oil. Remove chicken to a baking dish. In the same skillet, melt the butter, garlic, parley, and lemon juice. Simmer 1-2 minutes. Pour the sauce over the chicken, cover, and bake at 350* for 30 minutes. Uncover and bake for 5 more minutes. Serve with pasta, rice, mashed potatoes, or over a spinach bed.
