Baked Potato Soup

· 2-3 large baked potatoes
· ¼ C. butter
· ¼ C. chopped onion
· ¼ C. flour
· 1 can chicken broth
· 1 can evaporated milk

· Sliced green onion
· Cooked and crumbled bacon
· Other baked potato toppings as desired

Melt butter in saucepan. Add onion and cook until tender. Stir in flour. Gradually
stir in broth and evaporated milk. Mash one potato and add to mixture. Cook until mixture comes just to a boil. Dice remaining potatoes and add to soup. Heat through. Season with salt and pepper. Top with bacon, cheese, green onion, and other toppings as desired!
