- 1 1/2 Cups Flour
- 1/4 tsp. Salt
- 1 1/4 Cup Mashed Ripe Bananas (about 3 lg.)
- 1/4 Cup Unsalted Butter, melted
- 1 lg. Egg
- 1 1/2 tsp. Baking Soda
- 1/8 tsp. Nutmeg
- 1/2 Cup Sugar
- 1/4 Cup Brown Sugar
- 1/4 Cup milk
- 1 Cup Macadamia nuts, chopped & toasted
- (or use any other nut of your choice)
Preheat oven to 350 degrees. Beat the ‘wet’ ingredients together, then add the dry and mix just until mixed – a little lumpy makes the best muffins. Fold in one half to three quarters of the nuts. Divide batter among 12 prepared muffin cups (greased or lined with muffin paper). Sprinkle tops of muffins with remaining nuts. Bake until muffins are golden brown and toothpick inserted into center comes out clean – about 25 minutes.
