- 2/3 cup mayo
- 2 T. minced onion
- 1/4 cup sour cream
- 4 tsp. hot sauce (this doesn't make them too spicy, just adds great flavor)
- 2 chicken breasts, cooked and cubed or shredded
- 2 cups shredded cheddar cheese
- 4 flour tortillas
- *could also add 1/2 pkg. cooked and crumbled bacon, if desired
Whisk the mayo, onion, sour cream and hot sauce together in a large bowl. Add chicken (and bacon if using) and toss to combine. Fill the four tortillas with an equal amount of the chicken mixture. Sprinkle cheese on top of the chicken mixture, then roll stuffed tortillas, leaving edges open. Spray both sides of the tortillas with cooking spray. Heat a large non-stick skillet (or griddle) over medium heat, arrange wraps SEAM SIDE DOWN in pan and cook until golden brown, flip and cook until golden brown on both sides. Repeat with any remaining wraps. Transfer to plates and serve.
