- Chicken Breasts (one per person)
- Bacon (two slices per chicken breast)
- Swiss Cheese (One slice per chicken breast)
- Cream Cheese (one ounce per chicken breast)
Cook bacon until it’s about half way done. Remove from heat and drain fat. Preheat oven to 350. Pound chicken breast flat using a rolling pin wrapped with Saran wrap. Once chicken is flat, place a slice of Swiss Cheese on top and spread an ounce of cream cheese on top of the Swiss cheese. Roll the chicken up with the Swiss and cream cheese in the center and then wrap the chicken with two slices of bacon. Secure with toothpick(s) if necessary. Place the wrapped chicken and a foil-lined pan and bake for 30-35 minutes or until internal temperature reaches 160.
