Caramels

  • 4 Cups sugar
  • 1/2 tsp. salt
  • 1 quart whipping cream
  • 1 tsp. Vanilla
  • 2 Cups corn syrup
  • 1 large can evaporated milk
  • 1 Cup walnuts (optional)

In large kettle, combine sugar, salt, syrup, cream, and milk. Bring to boil and cook, stirring constantly. Keep at same boiling temperature – mixture will thicken and turn a tan color. Cook to firm ball stage or 230 degrees, stirring constantly. Remove from heat, add vanilla and nuts. Pout into buttered 9x13 pan. When cool, cut into pieces, wrap in waxed paper.
