- 1 head or bag Romaine Lettuce
- 1/4 red onion, chopped
- 1/4 Cup Cilantro, chopped
- Shredded Chicken (1-2 breasts)
- BBQ Sauce of Choice
- 1 Cup Shredded Cheddar Cheese
- 1 Cup or Can Corn, drained
- 1 Can Black Beans, drained
- 1-2 Tomatoes, diced
- 1 Lime, Wedged
- Tortilla Strips
- Ranch Dressing
Bake chicken breasts at 350 for about an hour, until done. Shred and add BBQ sauce, return to oven to heat through. Mix together the lettuce, onion, cilantro, and tomatoes. Divide lettuce mixture among plates. Top each salad with cheese, black beans, corn, tortilla strips, and BBQ chicken. Drizzle ranching dress on top, then squeeze one lime wedge to juice on top of salad.
